1 cup – Quinoa (rinsed)
1 ½ cups broth (chicken or vegetable)
2 cups chopped Parsley
4 plum tomatoes, chopped, seeded
1 ½ tbsp. mint, chopped
¼ cup plus 2 tbsp. Fresh Lemon Juice
¼ cup plus 2 tbsp. Grapeseed oil
½ tsp – Sea Salt
½ tsp ground pepper
Rinse Quinoa well, then add Quinoa with broth and cook for 20-25 minutes, until all liquid is absorbed.
In a medium bowl, mix the quinoa with the lemon juice, olive oil, and sea salt. If you have time, let it sit for a little while to allow the quinoa to absorb the flavors. Add the remaining ingredients and mix to combine.
