An old standard, but still absolutely delicious and nutritious.

Wet Ingredients
3 eggs
1 cup oil
2 cups sugar
1 teaspoon vanilla
2 cups grated zucchini

Dry Ingredients
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon ground ginger
½ teaspoom salt


Spray 2 5×8 loaf pans with non stick spray
Combine eggs, oil and sugar.  Then stir in zucchini and add vanilla
In a separate bowl sift together dry ingredients then blend into zucchini mixture and wisk.  Add nuts if desired and pour into prepared pans.

Bake one hour.

Allow to cool and slice and serve.
