Swiss Chard and Mushroom Frittata 🍳πŸ₯¬πŸ„

β€’ 1 1/2 Tbs ghee
β€’ 1 1/4 bunch swiss chard leaves, chopped
β€’ 1 cup tomatoes, cherry, diced
β€’ 1/2 cup shallots, sliced
β€’ 1/4 tsp salt
β€’ 1/4 tsp pepper
β€’ 6 eggs
β€’ 1/2 cup feta, crumbled (opitonal)
β€’ 8 oz shiitake mushrooms, sliced

1. Preheat the oven to 350Β° F.
2. Rinse the Swiss chard well under cold running water. Cut the stems
from the leaves and chop into small pieces and set aside. Chop leaves
into large, bite sized pieces.

4. Slice the mushrooms

1. In a 10 inch nonstick oven-safe skillet, heat the ghee for 1 minute over medium-high heat.
2. Add the Swiss chard stems. Cook for 2-3 minutes or until they start to get tender. Add in the shallots and saute until golden.
3. Add the Swiss chard leaves, tomatoes, mushrooms. Cover with lid and cook for 3-5 minutes until the chard is wilted and tomatoes are softening, stirring occasionally to coat in olive oil.
4. Stir in the salt and pepper. Spread chard evenly onto the bottom of the pan with a wooden spoon.
5. In a small bowl, whip the eggs with a fork. Pour evenly over the Swiss chard in the skillet. Sprinkle with the feta cheese if using. Cook for 3-5 minutes on the stove or until the eggs start to set on the edges.
6. Transfer to the oven and bake another 20-25 minutes or until middle of the frittata is firm.
7. To serve, top with cilantro and sriracha, if desired.

Veggie Egg Muffins πŸ₯¦πŸ₯šπŸ…

β€’ 1 1/2 scallions, diced
β€’ 1 cup tomato, diced
β€’ 3 eggs, beaten1/4 tsp salt
β€’ 1/2 cup spinach, chopped
β€’ 2 Tbs parmesan cheese
β€’ 2 Tbs basil, fresh, chopped
β€’ 1 cup broccoli florettes, cut into pieces

1. Preheat the oven to 350Β° F.
2. Wash and dice the broccoli, scallions, and tomatoes and put them in a large mixing bowl.
3. Chop spinach and basil.
4. Beat eggs in separate bowl.
5. Grease muffin tin. You can also grease muffin liners to make clean up
a snap.

1. Place beaten eggs in bowl with vegetables and herb and mix well.
2. Pour egg mixture into muffin pan or cups. Sprinkle cheese on top of mixture.
3. Bake for about 15 minutes until set.
