Spiced Apple and Pear Cobbler 🍎🍐
For Apple Pear Filling –
• 2 gala apples, cored and cut into 1/4″xslices or apple of choice
• 2 pears, cored and cut into 1/4″ slices
• 1 tsp cinnamon, ground
• 1/4 tsp nutmeg, ground
• 1 Tbs maple syrup
• 1 Tbs coconut oil, melted and cooled
• 1/8 tsp salt
• 1/2 lemon, zested and juiced
For crumb topping
• 1/2 cup rolled oats
• 1 tbs maple syrup
• 1 tbs coconut oil
• 1/2 cinnamon
• 1/2 cup walnuts raw, chopped
• 1/8 tsp salt
Healthy Whipped
Cream
• 1 cup heavy whipping cream
• 1/2 cup plain greek yogurt
2 Tbs honey
Zucchini, Apple and Potato Latkes with Apple Yogurt Sauce 🥔🍎
Latkes:
• 3 medium zucchini (about 1 1/2 lbs.)
• 2 medium russet potatoes (about 1 lb.), peeled
• 1 medium-tart apple, peeled
•8 sage leaves, julienned
•1 cup coconut flour
• 4 eggs, beaten
• 1 1/2 tsp. salt
• Pinch of white pepper
• 1 cup grapeseed oil
Yogurt Sauce:
•1/4 cup honey
• 1 tbs. lemon juice
• 1 cinnamon stick
• 2 medium-tart apples, peeled, halved, cores removed
• 1/2 clove garlic, minced
• 3/4 tsp. salt
• 1 cup 2 percent Greek yogurt
Parsnip Celery Root Latkes
• 4 medium parsnips (about 1 1/4 pounds), peeled and cored if necessary
• 1 small celery root (celeriac; about 1 pound), peeled
• 4 large egg whites, lightly beaten
• 1⁄4 cup white coconut four
• 2 tablespoons chopped chives, plus more for garnish
• 1 teaspoon whole-grain mustard
• 3⁄4 teaspoon salt
• 1⁄2 teaspoon ground pepper
• 1⁄4 teaspoon baking powder
• 8 tablespoons extra-virgin olive oil, divided
• 2 tablespoons Crème fraîche or sour cream for garnish
